Ingredients:

  • 1 whole pomfret (about 500g to 1 kg)
  • 2 tablespoons light soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon Shaoxing wine (Chinese cooking wine)
  • 1 teaspoon sugar
  • 3 slices of ginger
  • 2-3 stalks of green onions, sliced (for garnish)
  • Fresh cilantro leaves (for garnish)

Instructions:

Prepare the Pomfret:
  • Clean the pomfret thoroughly, removing scales and innards. Pat dry with paper towels.
  • Make diagonal cuts on each side of the fish to facilitate even seasoning.
Marinate the Pomfret:
  • In a small bowl, mix soy sauce, oyster sauce, sesame oil, Shaoxing wine, and sugar to create the marinade.
  • Rub the marinade over the pomfret, ensuring it reaches inside the cuts. Place ginger slices inside the fish.

Set up the Steamer:

  • Place a steaming rack in a wok or a large steamer, ensuring the water level is below the rack.

Steam the Pomfret:

  • Steam for 12-15 minutes, depending on fish size, until the flesh is opaque and flakes easily.

Garnish and Serve:

  • Remove pomfret from the steamer, discard ginger slices, and garnish with sliced green onions and cilantro.

Serve:

  • Drizzle hot oil over the fish for added flavor.
  • Serve with steamed rice and a side of soy sauce, chopped garlic, and chili for dipping.
